Authenticity and the freshest of ingredients are the key to the success of chef Andy Nusser and Mario Batali’s Spanish-inspired pair of restaurants in New York City.

You can see it on the menu, which offers such temptingly simple but effective dishes as fideos with chorizo, sea beans, and clams or sweetbreads with fennel al mono and marcona almond vinaigrette.

And you can see it on the superb wine list, a list that the judges at the World’s Best Wine Lists 2015 praised for its “beautiful showcasing of Spanish regionality.” That includes a “great selection of Sherries” such as Bodegas Tradición Palo Cortado VORS and Equipo Navazos La Bota "NO" #19 Cream.

It also includes fine light wines from pretty much every winemaking part of the country, from sparkling wines from Lanzarote to the great names of Rioja, from Txacoli in the Basque Country to emerging stars from Catalonia, Bierzo, and Galicia.
