There are seven restaurants in total, overseen by the executive chef for Constance Belle Mare Plage: Alexis Voisin. Voisin draws upon his culinary training in France, London, Portugal, Cambodia, and more, to produce a variety of dining options on the island, including, “the beautifully prepared yet simple Mediterranean dishes” of bar La Spaggia, one of six bars at the resort. Meanwhile, leading French chef Frédéric Goisset heads up the kitchen at Blue Penny Cellar, injecting a touch of the local cuisine to an already elegant menu.

Each restaurant has access to a wine list that was described by the judges at the World’s Best Wine Lists 2015 as “a list that is mainly focused on France but with a few icons to represent the rest of the world, and very much in tune with its clients’ tastes.” Blue Penny Cellar is the primary destination for fine wine, housing approximately 15,000 bottles in its cellar, where an extraordinary breadth and range of wines are represented from over 1,300 wineries around the world, an astonishing feat in itself. Situated in an elegant and sophisticated wine cellar, the restaurant cultivates haute-cuisine charm in its relaxed atmosphere. Gourmet cold-cut and cheese selections allow guests to enjoy a range of experiences, from a light snack and wine tastings, to multiple course meals and wine flight opportunities.

A superb wine list confirms Constance Belle Mare Plage’s commitment to fine wine. An impressive range of Puligny-Montrachet premiers crus from the likes of Jean-Marc Boillot and Jacques and Louis Carillon, plus grands crus including a 2007–2010 vertical of Etienne Sauzet’s Bâtard-Montrachet, are just a few examples from the impressive white Burgundy section.

Six vintages of Champagne Salon, and several of its sister house Delamotte, are available and sure to enhance any occasion spent at the resort, whether it be quiet relaxation or a special celebration. Deutz 1975 and 1988 are other exciting Champagne options.

The wine list features even more hidden gems, such as three vintages of Domaine Marcel Deiss Grand Cru Altenberg de Bergheim back to 1995.

Red wines include a range of Domaine de la Romanée-Conti up to Romanée-St-Vivant, La Tâche, and Romanée-Conti itself; a large collection of Thierry Germain Saumur-Champigny; New Zealand Pinot Noir from Ata Rangi, Felton Road, and Escarpment; and six vintages of Tertre Roteboeuf back to 1998. To cap off the evening, an eclectic selection of sweet wine is on offer, Château Gilette Crème de Tête Sauternes, Oremus Tokaji, and Mullineux’s Straw Wine from the Swartland being among the highlights.

Constance Belle Mare Plage recently underwent a renovation, completed in mid-2016, which provided a sophisticated face lift to the already stunning resort and many of its restaurants and bars. In the Blue Penny Cellar, an arced brick ceiling reinforces the impression of being in a cellar, while the polished floorboards and walls and hardwood furniture contribute to the warm ambiance. Blue Penny Cellar encompasses a full immersion into the world of wine, further amplified by the faint scent of cork and endorsed by the Constance team of knowledgeable sommeliers.
